Thai vs Isan Food: What’s the Difference?

If you’ve visited Kat’s Oriental Cuisine lately, you’ve probably noticed something exciting, we’ve expanded our menu to include authentic Isan food alongside our classic Thai dishes**.

A lot of customers have asked us: “Wait… isn’t Isan food just spicy Thai food?”

Not quite! While Isan (also called Issan or Esan) cuisine is 100 % Thai, it comes from the Northeastern region of Thailand and has its own bold, punchy personality. Think of it like this: if Central Thai food is Bangkok’s sophisticated city vibe, Isan food is the fiery, no-nonsense countryside party.

Let’s break down the real differences (and the delicious similarities).

Classic Central Thai Food – Balanced, Aromatic, and Often Creamy

  • Flavours: Sweet, sour, salty, and creamy with lots of coconut milk

  • Signature ingredients: Coconut milk, lemongrass, galangal, kaffir lime, basil, mild-to-medium chilies

  • Famous dishes you know and love: Pad Thai, Green Curry, Massaman Curry, Tom Yum Goong, Pad See Ew, Mango Sticky Rice

  • Heat level: Usually mild to medium (though you can always ask for “Thai spicy”!)

Isan Food – Bold, Spicy, Sour, and Super Fresh

  • Flavours: Extremely spicy, sour, salty, and funky — very little sweetness

  • Signature ingredients: Lime juice, fish sauce, fresh herbs, dried chilies, fermented fish (pla ra), sticky rice

  • Famous dishes we now serve at Kat’s: Papya Salad, Isan Fusion Curry sticky rice to name a few

  • Heat level: 🔥🔥🔥 Isan people don’t mess around — it’s legitimately spicy!
