It's often confused with pad krapow, the fierier holy-basil stir fry, but horapa is the milder, sweeter, more aromatic of the two: a staple of Thai homes, restaurants and street stalls alike.

The secret is timing. The basil is tossed into a hot wok at the very last moment, so its essential oils release their fragrance without cooking away.
