Thailand's most famous noodle dish is younger than most people imagine - and it began as a matter of national identity. In the late 1930s, the prime minister Plaek Phibunsongkhram set out to forge a unified Thai identity, even changing the country's name from Siam to Thailand. As part of a campaign to modernise the nation and reduce its reliance on rice, his government promoted a new national noodle dish and handed out recipes and carts to street vendors across the country.
The dish drew on stir-fried noodle traditions that Chinese traders had brought centuries earlier, but it was reinvented with thin Thai rice noodles, tamarind, fish sauce, egg, bean sprouts and crushed peanuts. Its very name - meaning 'Thai-style stir-fry' - marked it out as the country's own. From that campaign, a global icon was born.
