Massaman is the great outsider of Thai curries - and that's exactly what makes it special. Its roots reach back to the 17th century, when Persian and Indian Muslim traders brought their spice blends and slow-cooked stews to the kingdom then known as Siam. The name itself is thought to come from an old word for 'Muslim', and the spices tell the same story: cardamom, cinnamon, cloves and star anise, rarely seen in other Thai cooking, all arrived along those trade routes.
What makes it Thai is what happened next. Local cooks took those foreign spices and married them to coconut milk, potatoes and palm sugar, and turned a traveller's stew into something unmistakably their own. Unlike the fierce, fast curries, Massaman was built for patience - slow-simmered so the meat turns tender and the spices mellow rather than dominate. It became a dish of home kitchens rather than street stalls, made with intention.
