Here's a dish that isn't from where its name suggests. Despite being called Singapore Noodles, it was created in Hong Kong - most likely by Cantonese chefs after the Second World War, who were looking for a use for curry powder, a British-colonial addition to the southern Chinese pantry. Most Singaporeans have never eaten it.
So why the name? Most food historians agree it was branding: Singapore sounded cosmopolitan and exotic, and the label made a simple curried noodle dish more appealing to diners abroad. The dish spread with migrating Cantonese cooks and became a fixture of menus across the world.
