The Story
Tom Yum was born on the rivers of Central Thailand. Along the Chao Phraya basin, Buddhist riverside communities - who traditionally avoided killing large animals - lived on the freshwater prawns that filled the waterways. Boiled simply, the prawns gave a strong flavour, so cooks began adding local herbs to balance it: lemongrass, galangal, kaffir lime leaves and chilli. From that resourceful beginning came one of the world's great soups.
Its name captures the method: tom means to boil, yam refers to the bold, spicy mixing of flavours. The result is a broth that somehow holds sweet, sour, salty, spicy and aromatic all at once - so distinctive that Thailand has sought UNESCO recognition for it as part of the nation's cultural heritage.
