The Story

These spring rolls are where it all began. Kat first made them for the summer and Christmas fairs at her children's school, and they were so popular that they gave her the bug. That was when she decided she wanted to cook for the public and set up her own business.

Spring rolls came to Thailand from China, carried across South East Asia by traders and settlers, and every country made them its own. In Thailand they're called por pia tod: thin wheat pastry wrapped around vegetables and glass noodles, fried until crisp and served with sweet chilli sauce.

Kat still makes hers the way the school fair crowds loved them: carrot, lettuce, sweetcorn and glass noodles, lightly seasoned with herbs, with her homemade sweet chilli sauce on the side.
