The Story
Prawn crackers began in Indonesia as krupuk udang and spread across South East Asia. In Thailand they're called khao kriap kung, a familiar sight on tables and market stalls.
They start as hard, dried discs made from prawn and starch. Dropped into hot oil, they puff up to several times their size within seconds, turning light, crisp and airy.
