Isan Spicy Fusion Curry: Two Regions, One Bowl
Updated: Sep 28

Most curries on a Thai menu belong clearly to one place. This one doesn't.
Isan Spicy Fusion Curry blends the classic Thai curry base with the bolder, punchier character of Isan cooking, the Northeastern Thai cuisine that shaped Kat's own cooking growing up in Maha Sarakham. It's one of the hottest dishes on our menu, and one of the most distinctive.
What Makes This Curry a "Fusion"
Most curries on Thai menus, Green, Red, Panang, Massaman, follow a fairly consistent structure: a curry paste base, coconut milk, vegetables and a protein of your choice.
Isan Spicy Fusion Curry starts from that same foundation but pushes further into Isan territory. Isan food leans on bolder spice, sharper heat and less sweetness than central Thai cooking, and this curry carries that character through.
It's cooked with:
Authentic Thai and Isan spices, blended rather than kept separate
Peppers, mixed vegetables and aubergine, for texture and freshness
Coconut milk, to bring everything together
Fragrant Thai basil, added at the end for aroma
The result is a curry that still has the richness people expect from Thai coconut curries, but with a noticeably bolder, more direct heat behind it.
How Hot Is It, Really?
We list this one as extra hot, and we mean it.
It's built for people who genuinely want the heat, not just the idea of it. If you've tried our other curries and found them a little too gentle, this is usually the one people reach for next.
If you're not sure how you'll get on with it, it's worth asking us about spice level when you order. We're always happy to talk it through.
Choose Your Protein
Isan Spicy Fusion Curry is available with:
Chicken
Beef
Prawns
Pork
Tofu (contains soya)
Mixed Vegetable
Whichever you choose, the spice and character of the curry stays the same. It's really the vegetables, herbs and chilli doing the work here, not the protein.
Allergen note: this dish contains fish and shellfish. The tofu option also contains soya. Please let us know about any allergies when you order.
What to Order Alongside It
Given the heat, this curry works well with something to balance it. Good pairings include:
Jasmine Rice or Coconut Rice, to soak up the sauce and soften the heat
Papaya Salad, if you want to lean fully into Isan flavours
Prawn Crackers, as a cooling starter before the main event
If you're ordering for a group with mixed spice tolerances, this is a good dish to pair with something milder, like Massaman Curry, so there's something for everyone at the table.
A Dish That Reflects Where Kat's Food Comes From
Isan Spicy Fusion Curry sits at the meeting point of two food cultures. The comfort and richness of classic Thai curry, and the boldness of Isan cooking. It's a good example of what makes Kat's Oriental Cuisine different from a menu that only covers central Thai dishes.
